Sooo, I finally paid for the premium option of this journal. Hmmmm, I must really like this journal and all it's features.
Anyway, happy new year!! it's been a really really really long time since I last typed, can you believe it? Anyway I pray that we will be more consistent this year in Jesus name Amen!!!
So about last year...
God really really blew my mind. Especially concerning my business. He really said I am Jehovah Jireh!!! I made a lot of money with my business, I am talking hundreds of thousands if we are being honest. He provided the tools I needed also, like this 4 burner electric cooker with an oven free of charge!!!! from my landlord. God bless that man greatly in Jesus name Amen!!!!
That reminds me I was able to make a carrot cake and I think I want to write down the #recipe and be able to add it to my menu.
Ingredients
✔ 3 eggs (preferably large)
✔ 1 cup of vegetable oil (can be roughly 3/4 oil + 1/4 milk or cream of choice)
✔ 1 cup of brown sugar
✔ 1/2 teaspoon of salt
✔ 2 teaspoons of baking powder
✔ 1 teaspoon of cinnamon
✔ 1/2 teaspoon of nutmeg
✔ 1/2 teaspoon of cloves (optional)
✔ 1 teaspoon vanilla extract
✔ 1 and 1/2 cups of flour
✔ 2 cups of grated carrot (juice not extracted) (about 4 medium sized carrots)
✔ 1/2 cup of any nuts (almond/ walnut/ pecan)(roughly chopped)(I have tried it with almonds only)
✔ 1/2 cup of chocolate chips (or more or less) (optional)
✔ milk (may or may not be needed to arrive at the desired consistency)
Preparation and important notes...
✔ Mix the eggs, vegetable oil, baking powder, brown sugar and the salt very well
✔ Add the cinnamon, nutmeg, vanilla extract and mix it well
✔ Add the flour and mix it well (but not too much, you don't want to activate the gluten)
✔ Add the grated carrot, nuts, and chocolate chips and mix well (you are sort of folding it into the batter)
✔ You may need to pour a little milk to get the required consistency
✔ Pre heat the oven
✔ Bake at 170℃ for 50 to 60 minutes
